Aunt Molly's Muffins rec.food.recipes/Ed Paulhus
I don't know who Aunt Molly is, but these are great muffins.
1 cup white sugar 2 eggs 2/3 cup Mazola oil 1 1/2 cups flour 1 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. salt 1 tsp. vanilla 1 cup grated carrots 1 cup crushed pineapple, drained
Beat together sugar, eggs and Mazola oil. Sift together flour, baking powder, cinnamon and salt and add to mixture: Stir in vanilla, grated carrots and drained crushed pineapple. Mix well. Spoon into muffin tins and bake for 20 minutes at 400 degrees. You can store the batter covered in the refrigerator. |
