German Apple Cake with Cream Cheese Icing

3 eggs
1 cup vegetable oil
2 cups sugar
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
2 teaspoon cinnamon
1/2 teaspoon salt
4 cups apples, thinly sliced
1 cup chopped walnuts

Beat eggs and oil until frothy with a mixer. Then add sugar and vanilla. Next add flour, baking soda, cinnamon, and salt.

Fold in by hand, one cup at a time, the apples, and nuts.

Bake in a 9x12-inch greased and floured pan at 350 F. for 40 minutes or when a wooden toothpick comes out clean.

Cream Cheese Icing

8 oz cream cheese (warm to soften)
3 tablespoons margarine
3/4 teaspoon vanilla
2 cups powdered sugar

Use a mixer to blend the cream cheese, margarine and vanilla. Slowly add in the powdered sugar. Spread on the cake when the cake is cool.
