Veggie Bagel Sandwich rec.food.veg.cooking/Chris Vaughn
This is my favorite veggie sandwich. I find that it's easiest to just go ahead and make the entire thing of cream cheese ahead of time, and let it sit for a day or so. It absorbs all the spices that way, and you're not fooling with minute amounts of spices. As always, if you don't like something, don't put it in, if you like it and it isn't there, add it!
8 oz cream cheese (i tend to use the "light" stuff) 1/2 tbsp. garlic powder 1/2 to 3/4 tbsp. paprika (i like a lot, so i tend to put more than a 1/2) 1/8 tsp. mustard powder 1/2 tsp. sweet basil 1/2 tsp. oregano 1 tbsp dried onion flakes
Mix together in a small bowl. Put cream cheese back in it's tub after finishing mixing, then dump it in the fridge, hopefully for at least 24 hours. Make sure to season to >your< taste.
Now, get yourself a bagel. I like the Masada "everything" bagels, but you might not get those where you're at, so pick your favorite bagel, and cut it in two.
Sandwich insides: Diced Vidalia Onions Sliced Radishes Sliced Cucumber Sliced Tomatoes Sprouts (I like Alfalfa) A leaf of lettuce (I like Iceberg)
Smear some of the cream cheese mixture all over the bagel insides, take the diced Vidalias and make an even layer over the cream cheese, if you push it in a little, you won't have a problem of having little pieces of onion all over you when you eat this. Next, put on the slices of tomato (I like about two), then the cucumber on top of that (I usually find about 5-7 make a nice layer of cucumbers), then a layer of radish slices, top it off with a mop of sprouts, and stick a piece of lettuce on top (the lettuce will sort of hold everything inside of it if you pick a nice curvy piece of lettuce). Eat. Enjoy. :)
I absolutely love this served with tomato soup. If I'm feeling bored with the bagel, I put it all in a pita, and add avocados slices (mmm, heavenly).
