Scrumptious Chocolate Fruit and Nut Cookies rec.food.baking/Johnson Makes about About 1 dozen 3 1/2 inch cookies
1 1/4 cups butter, softened 2 cups sugar 2 eggs 2 tsp. vanilla 2 cups flour 3/4 cup cocoa 1 tsp. baking soda 1/2 tsp. salt 2 cups white chocolate chips (or semi-sweet) 1 cup chopped dried apricots 1 cup coarsely chopped macadamia nuts
Beat butter and sugar until light and fluffy. Add eggs and vanilla; beat well. In separate bowl combine next 4 ingredients and blend into butter mixture. Stir in chocolate, apricots and nuts. Use an ice cream scoop (!) or 1/4 cup measuring cup, drop dough onto ungreased cookie sheet. Bake 12-14 minutes or until set. Cool slightly and remove from cookie sheet. |
