Cauliflower Fritters (from Peru: Torrejas de Coliflor) From: Women's Day Encyclopedia of Cookery Makes 6 servings
2 lb. cauliflower 1 onion, chopped 1/2 tsp. salt 1/8 tsp. pepper 1 cup sifted flour 1 cup water 3 eggs, well beaten Fat for deep frying
Cook cauliflower until tender but not soft. Cool. Cut into pieces. Mix with onion, salt and pepper. Mix flour and water. Add beaten eggs. Combine with cauliflower mixture. Drop by Tablespoons into hot fat (360F on a frying thermometer). Fry until golden.
