Lemon Sponge Pie Custard on bottom, cakey on top Serves 6
1 baked 8 inch pie shell 1 c. sugar 2 Tbls. flour 1 egg, separated juice & grated rind of 1 lemon 1 Tbls.melted butter 1 c. milk
Mix together sugar,flour,egg yolk,lemon juice & rind,butter & milk.
Beat egg white till stiff & fold into lemon mixture.
Fill pie shell & bake at 375 F. degrees for 30 minutes or till top is brown.Reduce oven temperature to 350 F.degrees & bake 30 minutes longer or till firm. |
