Glorious Pineapple Pie Serves 8 Not only glorious, but glamorous & wickedly rich! A real star! Best served the same day it is made
3 egg whites 1 c. sugar 1 tsp.vanilla 21 crushed Ritz crackers 2/3 c. chopped nuts 1 (8 oz.) pkg. cream cheese,softened 3/4 c. powdered sugar 1 c. whipping cream 1 Tbls. sugar 1 (8 oz.) can crushed unsweetened pineapple,drained
Beat egg whites till stiff,then beat in sugar & vanilla gradually.Fold in cracker crumbs & chopped nuts.Spread in non stick or lightly greased 9 inch pie pan.Bake 30 minutes at 350 degrees F.,let cool.
Blend cream cheese with powdered sugar & spread over baked crust.Beat cream till stiff with 1 Tbls. sugar & fold in pineapple.Spread over pie & refigerate 2 hours or more.Decorate top with a few chopped nuts. |
