Strawberry Parfait Pie: Serves 6-8
1 baked 9 inch pie shell,chilled 1 (16 oz.) pkg.frozen strawberries,thawed water 1 (3 oz.) pkg.strawberry jello 1 pt. vanilla ice cream 1 c. heavy cream,whipped a few fresh strawberries for garnish
Drain strawberries & combine juice with enough water to make 1 & 1/4 cups liquid, heat liquid to boiling.Remove from heat & add strawberry jello,stirring till dissolved.
Cut vanilla ice cream into chunks & add to hot mixture,stirring till melted. Fold in drained berries.Chill in refigerator for 15-30 minutes,stirring occasionally.
Spoon into pie shell. Chill for 30 minutes or till firm.Top with whipped cream & fresh berries. |
