Brunch Eggs Serves 6 (A delicious Mediterranean version of poached eggs-similar to Piperade. Double the recipe to serve 6.)
2 medium onions, sliced 3 Tbsp. butter 3 green peppers, thinly sliced 1/2 c. chopped parsley 1/2 c. water 1/2 tsp. salt 1/4 tsp. pepper 3 medium tomatoes, peeled & cut in wedges 6 eggs 1/2 c. shredded Muenster or Mozzarella cheese
Saute onions in butter for 5 minutes. Add green peppers & parsley & saute, stirring. Add water, salt, & pepper. Cover pan & cook, stirring occasionally for about 10 minutes or till liquid evaporates. Reduce heat. Add tomato wedges. With back of tablespoon, make 6 depressions in vegetables. Break 1 egg in each depression. Cook covered for about 4 minutes.Uncover, sprinkle with cheese & cook another 1-2 minutes longer to set.
