Deli Cakes Makes about 18 cakes (Cooked like pancakes, but the stiffly beaten egg whites folded in make these unique. Also like a crepe. Incredibly light & tender, they are a perfect foil for creamed toppings or sweet fruit sauces.)
1/2 c. flour 1 tsp. baking powder 1/2 tsp. salt 2 large or 3 medium eggs, separated 2 Tbsp. melted butter 2/3 c. milk (1 Tbsp. sugar or honey, opt.)
Combine dry ingredients. Add beaten egg yolks, butter & milk. If you plan to use as dessert cakes, you may add the optional sugar or honey. Fold in beaten egg whites.
Drop in 3-4-inch rounds on greased & heated griddle. Brown lightly on both sides over medium heat.
Serve warm, topped with hot apple sauce flavored with cinnamon & nutmeg or with hot blueberries. Or serve with creamed mushrooms or ground ham, with sausages & of course with maple syrup. Or use to make strawberry shortcake.
