Brunch Hashed Sweet Potatoes: Serves 12
2 lbs.raw sweet potatoes ( or yams) 1 c.sugar 1/2 c.white KARO syrup 4 Tbls.margarine 1 tsp.salt 1 c.pineapple or orange juice
Mix 1 c.sugar & 1/2 c.Karo syrup.Cook till sugar dissolves & makes a syrup.Add 4 Tbls.butter.
Shred the sweet potatoes into a gallon of water,add the 1 tsp.salt.Drain & wash well.
Put into a shallow baking dish.Pour 1 c.pineapple or orange juice over the sweet potatoes & then pour syrup over all.
Bake at 350 degrees for 35 minutes or till sweet potatoes are transparent.
