Red Pepper Fettucini for Two

Slice 2 red (or one red and one yellow) pepper into the thinnest rings you can. Heat 1 Tbsp oil and briefly saute 2 cloves crushed garlic. Add the peppers, cover the pan, turn the heat down and cook until the peppers are very limp, about 20 minutes. Uncover, turn up the heat and add 2 Tbsp balsamic vinegar. Cook until the sauced is reduced and the peppers start to caramelize. Serve with fettucini.
