Apricot Sauced Pork Chops rec.food.recipes/LeiG Makes 6 servings.
3/4 cup orange juice 1/2 cup snipped dried apricots 1/4 cup sugar 1/4 teaspoon ground cloves 6 pork chops, cut 3/4 inch thick
In small saucepan combine juice, apricots, sugar, cloves and 1/4 cup water. Bring to a boil. Cover and simmer till apricots are tender, 20-24 minutes. Meanwhile, trim fat from pork chops. Heat trimmings till 1 tablespoon fat accumulates, discard trimmings. ( Or discard fat and use vegetable oil.)
Brown the chops in hot fat. Sprinkle generously with salt and pepper. Place chops in 11 x 7 1/2 x 1 1/2 inch baking pan or one that will hold the chops without overlapping. Spoon apricot mixture over. Bake, covered at 350 deg. till tender, 45 to 50 minutes.
