Mushroom Mock Quiche rec.food.cooking/Barbara Hlavin (1993)
3 cups fresh sliced mushrooms 1 cup chopped green onions 1 clove garlic, pressed 2 tablespoons butter 1 1/2 cups milk 1 cup shredded cheddar cheese 2/3 cups biscuit mix 4 eggs 1 teaspoon Dijon mustard 1 teaspoon dried parsley 1/2 teaspoon thyme, crumbled 1/2 teaspoon salt Dash black pepper
Saute mushrooms, onions and garlic in butter. Spoon into 10 inch quiche pan without a removeable bottom. Combine milk, cheese, biscuit mix, eggs, mustard, parsley flakes, thyme, salt and pepper until blended.
Pour into quiche pan.
Bake at 350 degrees 50 to 60 minutes until knife inserted comes out clean. Let stand 10 minutes before cutting.
