Gruyere Cheese Quiche rec.food.cooking/Barbara Wasson (1992)
This is a really yummy quiche - I think the gruyere cheese gives it its special taste. I usually use a combination of onion, mushrooms and zucchini.
8 or 9-inch pie crust
4 eggs 1/4 lb gruyere cheese, grated 4 oz half and half or use 2 oz milk and 2 oz cream (can also use all cream) salt nutmeg sauteed vegetables of choice (e.g. mushrooms, zucchini, broccoli, cauliflower, onion, ... sauteed - this removes some of the moisture and makes the baked quiche firmer)
Place the grated cheese on the bottom. Place the vegetables over the cheese. Beat the eggs and half and half with a little salt (e.g. 1/2 tsp). Pour over cheese and vegetables. Sprinkle top with grated nutmeg. Bake at 350F for 40-50 minutes or until done.
