Orange Pecan Bread Source: The Times-Picayune, NOLA
2 tbsp butter or margarine 1 cup honey 1 egg; beaten 1 1/2 tsp orange peel; grate 2 1/2 cups sifted flour 2 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 3/4 cup orange juice 3/4 cup pecans; chop
Preheat oven to 350F. Cream butter and honey until thoroughly combined. Add egg and orange peel. In separate bowl, sift flour, baking powder, soda and salt. Add the flour mixture and orange juice, alternating, to the creamed mixture. Stir in pecans. Pour batter into a greased 9x5x3 loaf pan and bake at 350F for about 1 hour.
