Cuban-Style Rice (Arroz a la Cubana) Servings 8
3 tablespoons vegetable or corn oil 1 tablespoon minced garlic 1/4 cup minced shallots 1/2 cup diced tomatoes 1/2 pound ground beef 1/2 pound ground pork 3 tablespoons soy sauce 1/4 cup raisins 1/2 teaspoon salt 1/4 teaspoon pepper 1/2 cup sweet peas 5 tablespoons peanut oil 3 ripe plantain bananas, sliced 5 eggs 5 cups cooked rice In a large stockpot, heat 3 tablespoons oil and saute garlic until light brown. Add shallots and cook until transparent. Add tomatoes and cook for 5 minutes. Stir in ground beef, pork and soy sauce. Cook until meat is brown. Add raisins, salt and pepper and stir constantly. Add peas and simmer for another 5 minutes. In a separate skillet, heat 3 tablespoons peanut oil and fry plantain slices. Remove from heat and set aside. Put 2 more tablespoons peanut oil in the pan and fry 5 eggs sunny-side up. Set aside. In a large serving platter, arrange cooked rice with meat in the center. Top with fried eggs and surround side of platter with fried bananas.
