Puerto Rican Fried Rice (Arroz Frito al Estilo Puertorriqueno) Servings 6
4 tb olive oil 4 tb soy sauce or to taste 1/2 lb chopped ham 1 chopped chicken breast cooked or shrimps 1/4 cup chopped cilantrillo 1/2 cup chopped red pimento 1 cup fresh bean sprouts 1/4 cup shredded iceberg lettuce 2 eggs, beaten 2-1/2 cups cooked rice (granoso) 1/2 teaspoon salt (careful, because of the soy sauce) 1/2 teaspoon black pepper Heat 2 of olive oil in a large skillet. Saute the cilantrillo, red pepper, bean sprouts, and lettuce over medium-high heat for 2 minutes. Add the meat, chicken, shrimps and sauté. Add the eggs and cook until scrambled soft. Set aside. In another pan, heat the remaining oil. Add the rice and the soy sauce and cook over high heat, stirring constantly, until the rice has become golden in color. Add the egg mixture, salt (careful, only if necessary), and pepper, turn the heat to medium, and cook for another 2 minutes. Serve. Delicious!
