California Avocado Tacos with Fresh Tomato Salsa Source: California Avocado Commission
Tacos: 1 California Avocado non-stick cooking spray 1 onion 2 sweet green peppers 2 sweet red peppers 1 cup cilantro 1-1/2 cups fresh tomato salsa 12 flour tortillas
Spray skillet with non-stick cooking spray. Cut onion and green and red peppers into julienne strips and saute lightly. Mince cilantro and cut avocado into 12 slices. Warm tortillas in oven and fill with sauteed peppers and onions, cilantro, avocado slices and salsa. Fold tortilla over and serve. Serves 12.
Fresh Tomato Salsa: 1 cup fresh tomatoes, diced 1/3 cup onions, diced 1/2 clove garlic, minced 1/3 teaspoon jalapeno peppers, minced 2 teaspoons cilantro, minced 1 pinch cumin 1-1/2 teaspoons fresh lime juice
Prepare salsa in advance as follows: Mix together all ingredients and refrigerate.
