Summer Scramble Serves 10
2 Tbls. butter or margarine 1/2 c. chopped onion 1 small clove garlic, crushed 1/4 c. snipped parsley 1 tsp. salt 1 tsp. seasoned salt dash each of pepper & thyme 1 medium head cauliflower, broken into small flowerets 3 large tomatoes, diced 2 small zucchini, sliced
In a large saucepan melt butter, cook onion & garlic till tender but not brown.
Add remaining ingredients. Cover tightly, simmer 15-20 minutes, uncover & cook about 10 minutes longer. Serve in sauce dishes with juices drizzled over.
