As with French fried potatoes, you cant stop eating them--
Jackstraw Eggplant Serves 6
Cut 1 medium eggplant in half lengthwise, pare. Slice 1/2 inch thick. Cut slices in 1/2 inch strips, dip in batter. (See below)
Drain well on wire rack. Fry in deep hot peanut oil at 375 degrees for 2-5 minutes. Drain on paper towels. Sprinkle with salt. Serve hot. Pass with Parmesan cheese if desired.
Batter: Mix 1 c. sifted all purpose flour with 1/2 tsp. salt.
Combine 1 slightly beaten egg , 1 c. milk & 1 Tbls. vegetable oil, add gradually to flour mixture. Beat till smooth.
