Leeks with Lemon Makes 3-4 servings
3 large leeks (1 1/2 lbs.) 1/4 c. butter, melted 1 Tbls. lemon juice 1/4 tsp. salt dash of pepper
Cut green tops from leeks, trim bulb roots & remove 1 or 2 layers of white skin. Wash thoroughly & drain.
Cook, covered, in a small amount of boiling salted water till tender,10-15 minutes. Drain thoroughly.
Combine remaining ingredients. Pour over leeks & serve.
