Smoky Peas Serves 4
3 slices bacon, diced 1/4 c. chopped onion 2 tsp. all purpose flour 1 c. light cream 2 c. shelled fresh peas or 1 (10oz.) pkg. frozen peas, thawed
Fry bacon till crisp, drain. Cook onion in bacon drippings till tender but not brown.
Blend in flour & stir in cream. Add peas cover & cook, stirring occasionally, till peas are tender, about 15-20 minutes for fresh peas & 5-10 minutes for frozen peas. Add bacon, season to taste with salt & pepper.
