Frosted Strawberry Squares Serves 15-20
1 c. all-purpose flour 1/2 c. chopped nuts 1/4 c. brown sugar, firmly packed 1/2 c. butter, melted 2 egg whites 2/3 c. white sugar 2 c. sliced fresh strawberries or 1 (10oz.) pkg. frozen strawberries, thawed 2 Tbls. lemon juice 1 c. heavy cream, whipped
Mix together flour, nuts, brown sugar & melted butter. Spread evenly over bottom of jelly roll pan or cookie sheet. Bake at 350 degrees for 20 minutes. Stir occasionally. Sprinkle 2/3 of these crumbs in 9"x13" pan.
Combine egg whites, white sugar, berries & lemon juice in large bowl. Beat at high speed to stiff peaks. Fold in whipped cream. Spoon over crumbs. Sprinkle remaining crumbs over top. Freeze 6 hours or overnight. Cut in squares. Enjoy!
