BAKED RUM BANANAS

1 tb butter
1 tsp lemon juice
1 banana (ripe) pelled and halved crosswise
1 tb brown sugar
3 tsp rum
1/4 cup heavy cream
1 1/2 tsp confectioners sugar

Preheat oven to 350 F. Melt the butter with the lemon juice in a small baking dish in the oven. Place the banana halves in the dish and turn to coat with the butter mixture. Sprinkle with the brown sugar and bake for 20 minutes, basting once. Sprinkle with the rum and bake 1 more minute. Beat the cream in a small bowl, adding the confectioner's sugar and the remaining rum, until stiff peaks form. Spoon over the warm banana and serve.
