Peanut Butter Sheet Cake Serves 20
2 c. flour 1 tsp. baking soda 2 c. sugar 1/2 tsp. salt 1/2 c. vegetable oil 1 1/2 sticks margarine 1/2 c. creamy peanut butter 1 c. water 2 eggs 1 tsp. vanilla 1/2 c. buttermilk Icing(see below)
Mix together in a 2 quart mixing bowl: flour, sugar, soda & salt, set aside.
In a 2 quart saucepan bring: oil, margarine, peanut butter & water to a boil. Pour over dry ingredients & mix.
In a bowl beat: eggs, vanilla & buttermilk. Add to mixture, mix till well blended.
Pour batter into a greased & floured 11x15x1 inch sheet cake pan. Bake 15-20 minutes in a 350 degree oven.
Icing:
1/2 c. evaporated milk or cream 1 c. sugar 1 Tbls. margarine 1 c. peanut butter chips 20 miniature marshmallows 1 c. chopped, dry roasted peanuts 1 tsp. vanilla
Bring evaporated milk or cream, sugar & margarine to a boil, cooking 2 minutes. Add chips, marshmallows, vanilla & peanuts. Blend till chips & marshmallows are melted. Spread on warm cake.
