Peanutty Egg Salad Source: Family Favorite Recipes Cookbook Yields 4 servings
6 hard boiled eggs 1/2 c. diced celery 3 Tbls. pickle relish 2 Tbls. diced pimento 1/3 c. roasted peanuts, chopped 2 avocados leaf lettuce
Peel eggs & chop coarsely. Mix next 4 ingredients with eggs & stir gently.
Peel avocados & cut in half, remove seed. Spoon egg salad mixture into the 4 avocado halves & place on a leaf of lettuce.
