Egg Hero

Serves 2

Egg Hero:
1 loaf French bread (about 12-inches long)
butter
lettuce leaves
1/2 c. shredded carrots
4 hard boiled eggs, sliced & divided
1/2 medium cucumber, sliced
1 large tomato, sliced
1/4 c. bottled Green Goddess, Creamy Cucumber, Italian or garlic salad dressing

Split bread loaf in 1/2 lengthwise. Spread butter over cut surfaces.

On bottom 1/2 of the loaf, layer lettuce, carrots, slices of 2 eggs, cucumber & tomato slices. Top with remaining egg slices.

Pour salad dressing lengthwise over egg slices. Cover with top half of loaf. Cut in 1/2 to serve.
