Blueberry Coffee Cake Source: Women's Circle Homecooking Cookbook Serves 10-12
2 c. sifted cake flour 1 tsp. baking powder 1 tsp. baking soda 1 c. sugar 2 sticks margarine 2 eggs 1 c. sour cream 1 tsp. vanilla 1 can blueberry pie filling
Preheat oven to 375 degrees. Sift cake flour, baking powder, baking soda & sugar together in a large bowl. Cut in margarine as you would for pie crust.
Beat together eggs, sour cream & vanilla. Combine with flour mixture, blending well. Spread half the batter in a greased 13x9x2 inch baking pan.
Spoon pie filling over batter & spread evenly. Spread remaining batter over blueberry filling.
Sprinkle with the following topping:
Blend together as for pie crust, 1/4 c. cake flour, 3 Tbls. margarine & 1/4 c. sugar. Sprinkle over top of batter in pan.
Bake at 375 degrees for 40 minutes or till lightly browned. Serve warm or cold.
