Cariotas (Venezuelan black beans) alt.support.diet/Rebecca Connors (1998)
I guess this recipe is low fat but it is really good. I get requests every time I make it for people. It was passed down from my Venezuelan grandmother.
In a large pot or preferably pressure cooker mix 2 cups of well soaked black beans, 1 tablespoon of allspice, cumin, pepper, and red pepper or cayenne if you like things spicy. Then add half of a green pepper (well chopped), 1 well-chopped onion, and a few bay leaves and cook until the beans are really soft. It will only take about 30 min in a pressure cooker but as long as two hours on the stove.
When almost done saute in a little olive oil: 3 tbsp of cumin, 1 onion, green pepper, and the carefully removed leaves from a bunch of cilantro.
When the beans are done mix in the saute, 2 tbsp of sugar, and salt to taste.
Have fun with this recipe. Sometimes I use maple syrup instead of sugar, add tons of hot peppers, corn whatever sounds good. Serve with grated cheese or feta cheese and rice.
