Penne alla Vodka: Serves 6 Source:Betty Crocker's Italian Cooking with recipes by Antonio Cecconi
3 Tbls.butter 1 Tbls.olive oil 2 cloves garlic,finely chopped 1 small onion,chopped(about 1/4 cup) 1/4 c.chopped prosciutto or virginia ham,fully cooked 2 boneless,skinless chicken breast halves,cut into 1/2 inch pieces 1/2 c.vodka 1/2 c.heavy whipping cream 1/2 c.sliced imported Italian black olives 1 Tbls.chopped fresh parsley 1/2 tsp.pepper 1 pkg.(16oz.)penne or mostaccioli 2 Tbls.freshly grated Parmesan cheese
Heat butter & oil in 10 inch skillet over medium high heat.Saute garlic & onion in butter mixture.Stir in prosciutto & chicken.Cook,stirring occasionally,till chicken is brown.Stir in vodka.Heat over high heat till hot.
Carefully ignite.Stir in whipping cream,olives,parsley & pepper when flame dies out*.Heat to boiling,reduce heat.Simmer uncovered 30 minutes,stirring frequently,till thickened.
Cook penne as directed on package.Mix penne & cream mixture,top with cheese.
*To extinquish flame quickly & easily,cover with lid.
