Egg Noodles & Hamburgers:
Serves 4

1 egg,beaten
1 Tbls.cold water
2 tsp.prepared mustard
salt & pepper
1 lb.ground chuck
1/4 c.grated Parmesan cheese
3/4 c.finely chopped scallions
1/4 c.finely chopped parsley
1/4 c.margarine
2 c.diced green peppers
1/4 c.diced pimentos
3 qts.boiling water
4 c.wide egg noodles

Combine the egg,cold water,mustard,1 tsp.salt & 1/8 tsp.pepper in a large bowl.Add the ground chuck,Parmesan cheese,1/4 c.scallions & parsley & toss till combined.Shape into patties & place in a shallow baking pan.Broil till brown on both sides & keep warm.

Melt the margarine in a large skillet over medium heat,add the green pepper & remaining scallions & saute for 6-8 minutes or till tender.Stir in the pimentos.Add 1 Tbls.salt to boiling water in a saucepan & add noodles gradually so that water continues to boil.

Cook,stirring occasionally,till tender ,drain.Toss noodles with vegetable mixture & season to taste with salt & pepper.Turn into a serving dish & top with Hamburgers.
