Strip off all the shiny connective tissue and fat, then try one of the following.

1. Cut into thin strips, marinate in soy sauce, thread onto skewer and grill, serving it with a spicy peanut dipping sauce.

2. Cut in half. Pound it out as flat as possible, marinate in a mixture of olive oil, lemon juice, some salt, pepper and oregano for a few hours and grill

3. Cut into slices about 1 - 1 1/2 inch thick, pound flat, dip in egg then seasoned bread crumbs and fry until golden brown.

4. Butterfly the loin and pound it out flat, cover with a layer of your favorite stuffing, roll it up, cover with a few strips of bacon and bake it for about 45 minutes.
