Lazy Chicken In Herbed Sauce:
Serves 6

"A Hollandaise-like sauce that makes itself.Cook a package of frozen broccoli right along & in with 1 cup raw rice & serve chicken & sauce with or over this Broccoli-Rice."

1 broiler/fryer,cut into 6-8 pieces
2 Tbls.butter
2 Tbls.cooking oil
1 tsp.grated lemon rind
1/4 tsp.each of basil & oregano
2 Tbls.lemon juice
1 (10 3/4 oz.)can cream of chicken or cream of mushroom soup

Skin chicken & brown lightly in hot butter & oil.Drain off fat & place chicken in baking dish.

Mix lemon rind,herbs,lemon juice & soup together & spoon over top of chicken.

Cover & bake at 325 degrees for 1-1/4 hours.Can be made the night before & reheated.
