Awesome Fish Marinade rec.food.cooking/Frank H Deutschmann (1990)
This recipe was given to me by a friend, and I have slightly modified it:
1 tbsp white vinegar 1/4 cup extra-virgin olive oil juice of 1 orange 1 tbsp grated orange peel juice of 1 lemon or lime 2 garlic cloves, pressed/mashed 2tbsp finely chopped parsley pepper to taste
Combine all ingredients.
This works best with Brook Trout (use a whole brook trout with skin; filet the trout, but don't even try to remove the skin as it holds the delicate meat together. Marinate the fish for 30-60 minutes in the refrigerator, broil for 5-7 minutes), but it's also good with almost any other fish, especially salmon, lemon sole, or red snapper!
