CRUST: Pastry for one crust pie
FILLING: 3 eggs 1 cup firmly packed brown sugar 1/4 cup butter, melted 1 tsp vanilla 1/2 cup coconut 1/2 cup rolled oats 1 (8-oz) can crushed pineapple, undrained
TOPPING: Ice milk, ice cream, or whipped topping, if desired
Prepare pastry for crust using 9-inch pan. Heat oven to 350 degrees F.
In large bowl, beat eggs at high speed until thick and lemon colored. Gradually add brown sugar, beating. Blend in butter and vanilla. Stir in remaining ingredients except ice milk. Pour pineapple mixture into prepared pan. Bake at 350 degrees F. for 40-50 minutes or until center is set. Serve warm or with cooled ice milk.
