Apple Bran Muffins rec.food.baking/Scott (2002) Makes: 12 1 1/4 cups bran 1 cup whole wheat pastry flour 2 1/2 tsp baking powder 3/4 tsp nutmeg 1/4 tsp ground cloves 1/3 cup milk 2 egg 3/4 cup maple syrup 1/4 cup butter 1 cup green apple 1 cup raisins Combine bran, flour, baking powder, nutmeg and cloves; set aside. Cream together milk, eggs, maple syrup, and butter; fold in flour mixture. Stir in apples and raisins. Pour into oiled muffin tins, and bake at 350 degrees until tops split, 15 to 25 minutes.
