Chipotle Salad Dressing rec.food.cooking/Starsha (2002)
Here's a base recipe I've used a variety of ways. You could stir some cheddar cheese into it. I haven't used it for salad, but I have used it as a dip, potato topping, meat sauce, etc.
Hydrate chipotles in rice vinegar. Chop. Add sour cream, yogurt, or creamed cheese to desired consistency. Age in fridge at least an hour, overnight is better. Taste before serving, it sometimes needs a touch of salt. I've also added chopped onion, garlic, various herbs, etc. |
