Mexican "Neat" Loaf: Serves 6
1 egg, beaten 1/2 cup tomato sauce 1 (4 oz.) can chopped green chilis, drained 1 (4 oz.) can chopped mushrooms, drained 1/3 cup tortilla chips, finely crushed 1 tsp. salt 1 tsp. chili powder dash of black pepper 1 1/2 lbs. lean ground beef 3/4 cup (3 oz.) Monterey Jack cheese, shredded
Preheat oven to 400 degrees. In a large bowl,combine first 8 ingredients. Add meat & mix well. Spoon meat mixture into a lightly greased 1 quart loaf pan. Bake for 40-60 minutes or till done. Sprinkle cheese on top & return to oven till cheese is melted.
