Chicken In Potato Nest:
Serves 4

2 c.leftover seasoned mashed potatoes
2 Tbls.butter
2 Tbls.flour
1/2 tsp.freshly ground black pepper
1 c.chicken broth
1/4 c.heavy whipping cream or half & half
1 (3oz.)can sliced mushrooms,drained
2 c.diced cooked chicken
2 Tbls.grated Parmesan cheese

Preheat oven to 400 degrees.

Line a greased 9 inch pie plate with mashed potatoes.

Melt butter in saucepan.Stir in flour & pepper.Add broth gradually,whisking till boiling.Add cream or half & half & mushrooms,whisking constantly,simmer for 3 or 4 minutes.

Put chicken into prepared pie plate.Pour sauce over chicken & sprinkle with Parmesan cheese.Bake 25-30 minutes.
