SMOKED SALMON PASTA SALAD WITH CAPERS Serves 4-6
1 cup light olive oil 6 tbsp Balsamic vinegar 2 tbsp heavy cream salt and pepper to taste 1 lb linguini, cooked according to instructions, rinsed with cold water and drained. 1 tbsp grated lemon peel 1 lb smoked salmon, chopped in bite size pieces 6 tbsp drained cocktail capers chopped cilantrillo for garnish
In small bown, whisk together the oil, Balsamic vinegar, add heavy cream, salt and pepper and blend. Prepare the pasta. Place pasta in large serving bowl, add sauce, smoked salmon, capers, cilantrillo and lemon rind and toss. Serve at room temperature.
