POTATO CROQUETTES (4)
1 lb potatoes 2 tb butter 1 egg yolk 1/4 cup hot milk salt and pepper seasoned flour egg and breadcrumbs for coating oil for deep frying
Boil the potatoes. Peel and mash. Return to pan. Add egg yolk, butter, hot milk, salt and pepper to taste and beat until smooth. Divide into rounds. Roll in seasoned flour, brush with egg and roll in bread crumbs. Deep fry in hot oil until golden brown.
