Basic Potato Salad
2 lbs. potatoes Various vinegars, optional 1 1/2 quarts chicken stock, optional Lemon or lime juice, optional 1/4 cup fresh mint, optional
Celery, optional 1 cup mayonnaise Bell peppers, optional 1/2 cup sour cream Red onion, optional 1 tsp. lemon pepper Scallions, optional 1/2 tsp. mustard powder Black olives, optional Granny Smith apples, optional Nuts, optional
In pan, boil potatoes in salted water or stock with mint. Drain, cool well and dice. In bowl, mix mayonnaise, sour cream, lemon pepper and mustard powder; refrigerate. Get creative with: chopped granny Smith apples, various vinegars, lemon or lime juice, celery, red, yellow, or green bell peppers, red onion, scallions, black olives, nuts, etc... |
