Grandma's Curry Stuffed Pork Chops
Six 1-inch thick pork rib chops 1/4 cup diced unpared apple 1/3 cup chopped onion 1/2 cup chopped celery 2 slices whole wheat bread,cut into 1-inch cubes 1/4 cup milk 1/2 teaspoon curry powder 1/4 teaspoon salt 1/4 cup flour 1 teaspoon salt 1/2 teaspoon curry powder 1/4 teaspoon black pepper 2 Tablespoons shortening or oil
Preheat oven to 350. Cut a pocket into the edge or side of each chop for stuffing. Mix apple,onion, celery, bread cubes, milk, 1/2 teaspoon curry powder and 1/4 teaspoon salt together. Stuff chops with mixture, closing pocket with toothpicks if desired. Combine flour, 1 teaspoon salt, 1/2 teaspoon curry powder and peppper in shallow dish.Dredge stuffed chops in flour mixture. Brown chops on both sides in shortening or oil. Place in baking dish and bake at 350 for 1 hour. (My grandmother's recipe doesn't say to cover the dish for baking, but I do since the chops are already brown and I don't want them to dry out.) |
