Must be on a rich food kick today, here's a really rich desert recipe:
Fruit Cocktail Cake
For the cake: 2 cups all-purpose flour 1 1/2 cups granulated sugar 2 eggs 1 teaspoon salt 2 teaspoons baking soda 1 can fruit cocktail, undrained 1/2 cup packed brown sugar 1/2 cup chopped nuts
For topping: 1 cup granulated sugar 1 stick butter or good quality margerine 1 can evaporated milk 2 teaspoons vanilla
For cake, beat together the flour, sugar,eggs, salt, baking soda and fruit cocktail. Pour into a 9X13 pan that has been sprayed with Pam. Sprinkle with the brown sugar and nuts. Bake for 40 minutes at 350. While cake bakes, combine topping ingredients in a saucepan and boil for 8 minutes, stirring constantly. When cake is done, remove from oven and immediately pour warm topping over it. Let cool. |
