Peaches Foster Slocum House, Fair Oaks, CA Makes: 2 portions
4 each peaches, peeled and quartered 3 tbsp. butter 5 tbsp. brown sugar 2 tbsp. Meyers rum 2 tbsp. peach schnapps 1 tsp. lime juice 1/2 tsp. vanilla extract 1/2 tsp. cinnamon
If over ice cream: vanilla ice cream If over French toast: ordinary French toast
1. Heat one tablespoon of butter in a small sauté pan over medium heat.
2. When sizzling subsides, add peaches and cook until lightly golden, about 1-2 minutes.
3. Add the brown sugar to the pan and cook until melted.
4. Add the remaining 2 tbsp. of butter, rum, peach schnapps, lime, vanilla and cinnamon.
5. Cook, stirring constantly until mixture is smooth.
6. Serve over ice cream or French toast (preference).
