Cheesy Asparagus Bake
10 1/2 oz can cut asparagus spears* 1/4 cup chopped red bell pepper 1/3 cup mayo 1/3 cup shredded sharp cheddar cheese 1/4 cup sliced green onions 1 egg white
Drain asparagus. Spray a shallow 1 qt baking dish with Pam and place asparagus and red pepper in dish. Mix mayo with cheese and green onion. Beat egg white until stiff. Fold into mayo mixture. Spread over asparagus. Bake at 350 for 20 minutes.
* I have used leftover cooked asparagus in place of canned and it works just fine.
