Robert West is the Executive chef at 15-o-Five in Modesto. He and his two partners opened the restaurant about 15 months ago. The décor is trendy but the food is classic American comfort food with things like meatloaf making it onto the menu.
2 Gala apples, sliced 2 Tbsp sugar 1/2 cup Calvados (apple brandy) 2 oz butter 1 Tbsp cream, optional Ice Cream
Heat a saute pan over high heat. Add the apples and butter. When the apples are a nice golden color, remove them from the pan and add the Calvados to the pan. Reduce by half and add the cream. Pour over your favorite ice cream.
