Basil and Cream Cheese Spread Recipe By: Healthy Choice Serving Size: 20
1/4 cup chopped walnuts -- optional 1 (8 oz) Package low-fat cream cheese -- softened 2 tablespoons snipped fresh basil 2 cloves garlic -- minced 1/2 teaspoon grated lemon peel 2 medium zucchini -- thinly sliced (2 cups)
Heat oven to 350 degrees F. In 8-inch square baking pan, bake walnuts for 5 to 7 minutes, or just until nuts begin to brown, stirring once or twice. Set aside.
Combine cream cheese, basil, garlic and peel in small mixing bowl. Stir in walnuts. Cover with plastic wrap. Chill 1 to 2 hours to blend flavors. If desired, garnish with additional chopped walnuts. Serve with zucchini slices.
