4 medium potatoes, peeled and shredded (about 4 cups) 1 medium yellow onion, (about 1 cup) shredded 1/2 cup milk 1/2 cup butter or margarine melted 1/4 cup sour cream 3 teaspoons dried chives 1/8 teaspoon salt 1/2 cup grated parmesan cheese fresh chives and chopped red bell pepper for garnish
Preheat oven to 375 degrees. Spray a shallow 2 quart square or rectangular baking dish with vegetable cooking spray.. In a large bowl, combine potatoes, onion, milk, butter, sour cream, chives, and salt and mix well. Spoon potato mixture into prepared dish. Sprinkle Parmesan evenly over the potatoes. Cover the casserole tightly with foil; bake for 30 minutes. Uncover; bake until golden brown and heated through, about 25 minutes. Garnish with chives and red pepper. Serve and enjoy |
